(Not So) Red Velvet Cake

Things went crazy. I was suppose to publish this last month, but I deleted it in my drafts. So, here I am now, trying to recall my post again.

I made this lovely cake for my cousin who celebrated her birthday last month. This is from Bakerella's website. You know, I've been spending my time reading her blogs, checking her very cute creations (which I always wish I could ever taste), and entering her giveaways.


Clockwise: the cake fresh from the oven, pink frosting almost done, a slice to those who can't wait, the refrigerated version, and my daughter enjoying her share.



The reason why I call it the (Not So) Red Velvet Cake is because I did not follow the original recipe which was calling for 2 ounces of red food coloring. I also reduced the amount of sugar and the oil. I know I am a little adventurous in baking, but that's where the fun is. I did not even come up with a perfect cream cheese frosting. Blame it on my carelessness because I took the wrong sugar from the grocery. I failed to notice it until I was already home. I mistakenly lifted a box of caster sugar instead of confectioner's sugar from the shelf. Duh!

If there's one thing I want to try, that would be baking. I'm afraid to experiment with baking because one wrong measurement can destroy the recipe.
