Beef Tapa

Here is something you can do to preserve your leftover meat after the holidays. This is typically done with beef, but also works well with pork. I know it from my grandpa in the province. He would always preserve beef and pork leftover meat after a big family occasion. Until these days.




Here's how:
Slice meat thinly. Season with salt, black pepper, and soy sauce. Marinate for an hour. Hang to air dry to come up with that juicy "tapa" similar to the picture. Or allow sun drying for a longer life.

Once dried, you may arrange the meat in an airtight container and put to the fridge. It is ready to cook. At anytime, you can slice the meat into bite-size pieces to fry.





*Best served with fried rice and omelet.
