My Version of Spanish Rice

Cooking steamed rice again by adding some spices and other flavors makes it tastier and interesting. Here is my version of "sinangag Espanyol" or Spanish fried rice. Enjoy!

Ingredients:
- 4 cups of steamed rice
- 1/4 cup green peas
- 1/4 cup carrot and corn
- 1 medium-sized red bell pepper, cut into tiny squares
- 3 cloves of garlic, minced
- 2 tbsps vegetable oil
- 1 tbsp of achuete seeds
- 2 tbsp ketchup
- salt to taste

Cooking Procedure:
Heat the oil in a pan. Add in the achuete seeds to the oil. Let them extract color and flavor. When the oil is finally really red, start spooning off the achuete pieces. Now sauté the garlic, green peas, bell pepper, then carrot and corn.
When the grains are cooked, add in the ketchup then season with salt. Stir in the rice. Mix well to distribute the all the flavors and colors. Let cook for 5 minutes by mixing from time to time. Serve hot with grilled chicken and vegetable salad.


* This recipe is good for 6 people.
