Amplaya Versus Diabetes

People usually don't like eating ampalaya or bitter melon because of its undesirable taste. Perhaps, they have to know that the trick is with the cooking. I believe this wonder vegetable can help our bodies in balancing sugar level. So, I always cook this favorite ampalaya recipe.

Ampalaya with Eggs (Tortang Ampalaya)

Ingredients:
2 red tomatoes, chopped
2 eggs, beaten
1 medium sized bitter melon or ampalaya, sliced thinly
1/8 kl chicken or pork, sliced thinly
1 small onion, chopped
2 cloves of garlic, chopped
salt to taste
cooking oil
a pinch of black pepper (optional)
shrimps (optional)


Cooking Direction:
Sauté the garlic, onion, and tomatoes in a medium fire. Add your choice of meat. Cook until brown. Add the ampalaya. After about 3 minutes, mix in the beaten eggs. Season with salt. Serve.
